Coconut Chia Pudding (GF DF SF)

photo-4This is one of my favourite breakfasts. It’s super quick, very easy and incredibly nutritious. Chia seeds are high in protein, calcium and fibre. As well as providing essential fatty acids, magnesium potassium and iron. I mix the chia and coconut water before I go to bed and leave in the fridge over night, so in the morning I only need to add the fruit, seeds and coconut cream before I eat.

 

Ingredients

1/4 cup of chia seeds

3/4 cup of coconut water

4 Tbls Coconut cream

Berries and fruit to garnish

2 Tbls mixed seeds – sesame, pepita, sunflower and coconut flakes. 

 

Method

Combine the chia seeds and the coconut water in a glass or breakfast bowl and stir for one minute until the mixture starts to thicken slightly. Then set aside for at least 20 minutes, so that it sets like a pudding. Top with coconut cream, fruit and seeds.

Enjoy!

This pudding also tastes great topped with yoghurt instead of coconut cream. Instead of seeds you can use nuts, both of which taste better roasted on a dry frying pan till they begin to change colour. For my son I add a dash of maple syrup to encourage him to eat it (which works).
