Blueberry Blissballs
These blueberry blissballs are protein rich and low in natural sugars. Plus the blueberries add a nice polyphenol - antioxidant, good bacteria feeding hit. So I like these as an alternate snack to fruit for my toddler.

  • 400g NutsI like to use a mix of different nuts - usually I have about 200g of almonds and then top up with a mix of macadamias, hazelnuts, brazil nuts, cashews, pecans and/or walnuts
  • 100g Fresh medjool datesYou could probably use pitted dried dates but I recommend soaking them overnight or for a few hours before use
  • 150g BlueberriesFresh or frozen
  • 50g Desiccated coconutTo add to mix
  • 50g Desiccated coconutFor rolling the balls in
  1. Place all nuts into a food processor and blend until they make a fine meal
  2. Add dates, blueberries and coconut to the nuts and blend until well combined
  3. Roll into small balls and cover in desiccated coconut until well coated. Store in an airtight container in the fridge. Enjoy
